JAX fish house ~Happy Hour~

YUUUMMMMM!  Best Martinis EVER!!  

Jax is a classy yet not yuppy at all.  We had great service, my Roommate and I weren't too fond of the Cucumber-avocado Gazpacho soup and the waiter brought us a different soup to try on the house.  
We hit up happy hour which is from 4-6pm everyday.  We shared the Calamari which was perfect had two side dipping sauces that were very tasty (little spicy).  I had two cucumber lemon press martini's and my roomie had the strawberry lemonade martini.  Hers was good a little sweet for me but mine, omg I could have drank them all night if they didn't kick my ass after the first two.  I would suggest this for a nice evening coctail with friends or even a loved one, very classy and again great service.  10/10!!

Got a little ink this weekend, people keep asking me what it means and I really didn't go into it with a reason other than I was just craving some ink.  But for those who are looking for a meaning... 

At this point in my life I would say it's just a reminder to spread my wings, meet new people, do new things, and keep moving forward.  There it is.

Broccoli "Slaw"

Yum Yum Yum, my new favorite slaw.  

What you need:

4 cups of (dime sized) cut broccoli

4 cups of thinly sliced cabbage 

1/2 cup of sliced scallions 

2 tbsp sesame or almond oil 

3 tbsp apple cider vinegar 

2 tbsp light soy sauce 

1 clove crushed garlic

1/4 cup dried cherries ( or cranberries) chopped up

1/3 cup roasted sunflower seeds

of course feel free to tweak this, make it your own...always better that way

Directions:

Combline cabbage, broccoli, and scallions in large bowl

in seperate, smaller bowl combine oil, viniger, soy sauce, and garlic

finish with sunflower seeds and dried fruit

I rate this a 9/10...sooo good.

Weightless @ Viestenz-Smith Mountain Park

Had a work retreat up @Viestenz-Smith Mountain Park in Estes Park Colorado today.  The retreat went well, learned a lot about my coworkers and even more about myself.  But what I enjoyed most was the Park.  The park lies along The Big Thompson River, there is open grass area, a park, and well just the most beautiful mountains surrounding it.  There is also a section blocked off that you can rent for weddings, retreats, and other special occasions. I've posted a couple pictures, I suggest you have a picnic, dip your feet in the river, and do some meditating @ this park before summer is over. (picture from Flickr)

Paula Deens Lemon Bars

Not only is this my first time making Lemon Bars but my first time making dough, they turned out great! I'm bringing them to work tomorrow I'll let you know what others think.  

 
People loved them... brought about 20 came back with 0!!  Yay! Personally wasn't a fan but i wasn't eating them so that's okay.

Cuppy's Coffee...mmm mmm not so great

Tried Cuppy's coffee for the first time today, didn't find it all that tasteful.  I'm a huge coffee drinker and I just felt like the coffee wasn't very fresh or strong.  I would compare it to something you would get at a gas station.  However, the atmosphere was very welcoming (though small).  The lights were dim the chairs were confortable and the bar faced a Drake, I also like that they support other local businesses.  They were selling beautiful handmade cards, and candles.  I also like that you have over 30 different coffee flavors to mix.  I got a blended toffee nut coffee. I would rate this coffee shop a 5/10. 

LUNCH @ (IN*GRE*DI*ENT)

INGREDIENT IS A NEW RESTAURANT IN DOWNTOWN FORT COLLINS.  

EVERYTHING IS MADE FROM SCRATCH, YOU HAVE A MENU OF ABOUT 80 THINGS TO CHOOSE FROM AS WELL AS CUSTOMIZABLE MEALS.  THEIR MENU CONSISTS OF SALADS, HOT OFF THE GRILL SANDWICHES,  SOUPS, WRAPS & PENNI'S, GOURMET PIZZAS, AND OF COURSE A HAND FULL OF YUMMY SIDES.  THE PRICES WERE REASONABLE ABOUT $12 A MEAL, BUT PORTIONS ARE PRETTY SMALL SO PLAN ON DESSERT. 

SOMETHING I FOUND REALLY COOL WAS THEY DON'T EXCEPT TIPS (NOT THAT I MIND TIPPING) BUT INSTEAD THEY WANT YOU TO USE THAT 10% AND APPLY IT TO SOMETHING FOR YOURSELF OR THE COMMUNITY, THIS SHOWS REAL GENUINE CUSTOMER SERVICE.
